Easy Focaccia Bread

Make the Dough:
Combine olive oil, minced garlic, thyme, rosemary, and black pepper in a cold medium skillet. Place the pan over low heat and cook, stirring occasionally, for 5 to 10 minutes or until aromatic. Set aside and allow to cool.
In a large bowl, combine the warm water, yeast, and sugar. Stir a few times, then let it sit for 5 minutes.
Add the flour and infused garlic-olive oil mixture to the bowl with yeast. Stir 3 to 4 times until the flour has moistened. Let sit for another 5 minutes.
Stir in the remaining flour and the salt. When the dough comes together, transfer it to a floured board and knead 10 to 15 times until smooth.
Transfer the dough to a large oiled bowl, cover with a warm, damp towel, and let it rise at room temperature until doubled in size, for 1 to 2 hours.
Bake:
When the dough has doubled in size, preheat the oven to 450°F (232°C).
Use two tablespoons of the remaining garlic-olive oil mixture to oil a 9×13-inch baking pan.
Transfer the dough to the baking sheet, then gently press it into the pan. Use your fingers to dimple the dough, then drizzle the top with the remaining garlic-olive oil mixture. Let the dough rise for 20 to 30 minutes until it puffs slightly.
Bake until golden brown, 15 to 20 minutes, and then let the bread cool completely on a wire rack.
Best Banana Bread

- Preheat the oven to 350 F. Grease and flour a bread loaf pan.
Lightly roast walnuts on a skillet, continuously stirring so they won’t burn. Coarsely chop and cool to room temperature.
In a mixing bowl, cream together softened butter and ¾ cup sugar (or honey).
Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.
In a separate bowl, whisk together: 1 ½ cups of flour, 1 tsp of baking soda, and ½ tsp of salt, then add to butter.
Add ½ tsp of vanilla extract and mix in chopped walnuts.
Pour into prepared loaf pan. Bake at 350 F for 55-60 min or until a toothpick inserted into the center comes out clean.
Let banana bread rest for 10 minutes before transferring to a wire rack to cool.
Easiest Bread Machine Recipe

This recipe works with avocado oil and you can probably substitute sugar for honey. I use active dry yeast, but I’m sure instant would work too (maybe use a little less). Either wheat or white flour is fine.

Put the listed ingredients in order into the pan of the bread machine. You want the flour to be a barrier from the salt and the yeast, so spread it to the corners.
Make a little well for the yeast with your finger in the middle of the pan and pour the yeast in the well.
Select basic or white bread setting and press start.
Remove loaf from the machine after the cycle is done. Let cool and enjoy!
Brazilian Cheese Bread Bites (Pão de Queijo)
(Gluten Free)

- Preheat the oven to 400. Grease a muffin tin and set aside
- Place all the ingredients into a blender or food processor
- Add all the ingredients except the tapioca flour and pulse till smooth
- Add the tapioca flour and pulse a few times
- Immediately pour the mixture into the muffin tins. (only fill halfway) If you don’t pour the batter in right away and cook it, the flour will settle into the bottom.
- Bake for 15-20 minutes till puffy and golden.
- Remove from oven and let cool for 5 minutes

Freeze & Reheating Instructions
These freeze beautifully. To reheat, place frozen bread bites onto a lined cookie sheet and reheat at 350 for 20 minutes or until warm throughout.
Make-ahead Batter
You can mix all the ingredients together and put in the fridge overnight in a lidded measuring bowl, but the tapioca will settle and can be hard to remix. Instead, combine all of the ingredients EXCEPT the tapioca flour the night before. Add tapioca flour right before baking.
Adding Cinnamon Swirl to Sourdough

Note: I don’t use her sourdough recipe, but I use the recipe and directions for adding the cinnamon/sugar swirl.
Ingredients for Cinnamon/Sugar Swirl:

- In a small bowl, mix softened butter, cinnamon, brown sugar, and flour.
- Using a silicone spatula, spread half the cinnamon sugar mixture evenly down the center of the dough, leaving about 4 inches clear along each short side.
- Fold the dough’s sides to the center and pinch all the seams closed.
- Spread the rest of the cinnamon sugar filling evenly over the top, leaving about an inch on each side for sealing.
- Roll the dough tightly into a long shape, pinching the edges to seal as you roll. When you get to the end, gently pinch the seam to close it up.
- Place seam-side up into a floured, towel-lined banneton. Cover and refrigerate overnight.
