Ranch Oyster Crackers

Ingredients

  • 2 packages oyster crackers

  • ½ cup vegetable oil

  • 2 envelopes ranch dressing mix

  • 2 tsp dill weed

Directions

  1. Toss crackers in oil to coat.

  2. Bake at 250 F for 15 minutes

  3. Sprinkle seasoning over crackers and toss gently to cover.

 

New Year’s Cheese Ball

Ingredients

  • 2 packages (8 ounces) cream cheese, softened

  • 1 ¼ ounces (approximately

  • 3 ½ T.) Parmesan cheese

  • ½ C. mayonnaise

  • 10 slices crisp bacon, crumbled into small pieces

  • ¼ C. fresh chives, diced small

  • 1 1/2 -2 C. finely chopped walnuts, pecans, or sliced almonds

Directions

  1. Mix the first five ingredients thoroughly in a bowl and form into two separate balls.
  2. Roll each ball in nuts until coated.
  3. Cover and refrigerate at least four hours, or overnight.

Shirley Cruth’s Bread & Cinnamon Rolls

Ingredients

Dough:

  • 1 T. sugar
  • 1 T. yeast
  • 1 T. salt
  • 3 C. warm water
  • ½ C. oil
  • 6-7 C. flour

 

Cinnamon Roll Filling:

  • 8 T. butter, softened
  • 1 ½ C. light brown sugar
  • 1 ½ T. cinnamon
  • ¼ t. Salt

 

Cream Cheese Frosting:

  • 8 oz. cream cheese, room temp
  • ½ C. butter, softened
  • 1 t. Vanilla
  • 3 C. confectioner’s sugar
  • 1 T. milk

Directions

Bread: Makes 2 loaves.

  1. Mix all but flour in a mixer with a dough handle, or with a whisk in a large bowl. Add flour 1 cup at a time, mixing well. Knead for 5 minutes. Cover, place in a warm spot, and let rise until double (about 1 hour). 
  2. Punch down and place on a floured surface. Divide in half. Mold each half into a loaf and place in a greased bread pan. Allow to rise to about 1 inch above pan brim. 
  3. Bake at 350 degrees for 40 minutes. Cool on cool racks, butter tops while still hot, if desired.

 

Cinnamon Rolls: 

  1. Follow step 1 for bread loaves
  2. Punch down, and roll out flat, about 24 x 25 inches. Spread butter evenly on dough to edges. Mix sugar, cinnamon, and salt, and sprinkle evenly over butter. ROll the dough up tightly and slice into 1 inch slices with a string or with dental floss. Place in two greased 9 x 13 pans, or on a greased cookie sheet. 
  3. Allow to raise until double (about 90 minutes). Bake at 350 degrees for 30-35 minutes 


Cream Cheese Frosting: 

  1. Mix everything until smooth and spread generously on hot cinnamon rolls.

Raspberry Sweet Rolls

Ingredients

For the dough:

  • 2 packages yeast, (4 ½ teaspoons), dissolved in 1 cup lukewarm water
  • 6 tablespoons shortening or unsalted butter
  • 1 cup granulated sugar
  • 9 cups unbleached all-purpose flour
  • 2 cups hot water
  • 2 eggs, beaten
  • 1 tablespoon salt

 

For the filling:

  • 1/2 cup softened butter
  • 1/2 cup light brown sugar
  • 3 1/2 cups raspberries
  • 1/3 cup granulated sugar
  • Zest of 1 large lemon
  • 1 1/2 teaspoons cornstarch

 

For the frosting:

  • 4 ounces cream cheese, at room temperature
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest

Directions

  1. Add yeast to 1 cup of lukewarm water. Stir with a spoon and set aside for about five minutes.
  2. In the bowl of a stand mixer, add shortening, sugar, and salt to hot water and beat for 30 seconds. Let cool to lukewarm temperature. Stir in 2 cups of flour and mix until smooth. Add yeast mixture and mix until well combined. Mix in the beaten eggs.
  3. Gradually stir in the remaining flour and mix with the dough hook for about 2 minutes. Remove dough from the bowl and place on a lightly floured counter. Knead by hand, add a little flour if the dough is still sticky. Knead until dough feels satiny and smooth.
  4. Put the dough in a greased bowl and cover with a towel. Let rise for 30 minutes or until dough doubles in size.
  5. Remove dough from bowl and place on a lightly floured counter. Divide dough in half. With a rolling pin, roll one half of the dough into a rectangular shape. Spread dough evenly with 4 tablespoons of softened butter. Sprinkle dough with ¼ cup brown sugar. In a medium bowl, carefully stir together the raspberries, granulated sugar, lemon zest, and cornstarch. Sprinkle half of the raspberry mixture over the dough.
  6. Gently roll up dough into one long roll. Cut rolls, using a piece of dental floss or thread, about two inches thick. Place rolls into a greased 9X13 baking pan.
  7. Now follow the exact same steps with the other half of the dough, using the remaining ingredients.
  8. Place rolls in a warm spot and cover with a towel. Let the rolls rise until doubled in bulk, about an hour. Bake rolls at 350 degrees F for 25-32 minutes or until golden brown on top. The insides should be soft, but not doughy. Remove pans from the oven and let cool on a wire rack.
  9. While the rolls are cooling, make the frosting. In a medium bowl, combine cream cheese, butter, powdered sugar, and lemon zest. Using an electric mixer, beat until smooth. Spread frosting on rolls and serve.

Puppy Chow

Ingredients

  • 9 cups Crispix or Rice Chex cereal
  • 1 C. Semi-sweet chocolate chips
  • ½ C creamy peanut butter
  • ¼ C unsalted butter
  • 1 t. Vanilla extract
  • 1 ½ C powdered sugar

Directions

  1. Place cereal in a large mixing bowl. Set aside

  2. Combine chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring each time, until smooth. 

  3. Stir in vanilla extract.

  4. Pour the chocolate mixture over the cereal. Gently stir until evenly coated (try not to crush it). 

  5. Transfer coated cereal to a large zip-top bag. Add powdered sugar, seal, and shake until fully coated. 

  6. Add any desired mix-ins (m&ms, candy, etc) and shake gently. 

  7. Spread on parchment paper to cool for 10-15 minutes. Store in an airtight container.
